    LOVE this channel. Jamie is just so Cute !!! ( meant is the best way possible, and, of course, respecting MRS Jamie ) Your style is playful and real, charming to watch, bloopers and all. Ive wanted to make this soup forever but just havent. I share a communal kitchen with 4 other people, id have to do it in the middle of the night LOL. Unless a person happens to be friends with a Butcher, those marrow bones are going to cost a fortune, as does Cognac. ( 6.99 a pound at my local real butcher shop.ugh. ) I AM a huge fan of homemade stock, so ide do it from scratch, too.. Simple ingredients, masterfully cooked, yield such fantastic results. Must have been GREAT as he ate 2 HUGE bowls ! I DID applaud !

    That last recipe is 100% written to be made in a commercial kitchen, all the cooking things separately then cooling is prep work to do in bulk then bring back together to order

    Dude some places there is no ricotta,you use cottage cheese.My family only like the Neopolitan version,no Bechamel,cheese.As for Italians,if their mama didn't cook it it will always be inferior.

    Growing up in Kentucky, my mom always made lasagna without cottage cheese or ricotta -- my dad hates both. So me and mom would just get our portion of lasagna and heap up some cottage cheese on the side. Trick is to get a little of each on the spoon. These days, when I cook my own lasagna, I use ricotta during the making, but I still eat it with cottage cheese on the side! One can never have too much cheese.

    Do you think if you used a European butter with a heavier fat content it would’ve been more in keeping with Julia Childs ingredients that she would’ve been utilising? I wonder if the sauce separated because hers already started off with a higher fat content butter than we use here in America… (just a little fact I learned recently and now makes me feel like every failure I had in the past was a minute detail I just wasn’t aware of). . Cooking is chemistry.
